Óscar Velasco
Óscar Velasco began his career in the kitchen of Zalacaín Restaurant, Madrid (* Michelin) in 1996, going on to become head chef de partie at Martín Berasategui Restaurant in Guipuzcoa (*** Michelin) in 1997.
His constant curiosity and eagerness to learn led him to Can Fabes, where legendary Catalan chef Santi Santamaria took him on as his right hand from 1998 to 2001. Then, in 2001 he assumed gastronomic management of Santamaria’s new project in Madrid - Santceloni -where his career began to reach new heights. Velasco was now an important reference in Spanish haute cuisine and he received the highest recognition from various guides and critics, including 3 Repsol suns, 2 Michelin stars and the National Award for the Best Chef de Cuisine by the National Academy of Gastronomy in 2007.
In 2021 he embarked on a new project as Gastronomic Director at Finca Serena, with the goal of bringing his exceptional technique and philosophy to the Mallorcan table, by honouring the roots and local products of this luxury resort. Making this reality in Jacaranda restaurant.
After the success of this first Mallorca opening now Óscar Velasco starts the new project with Restaurant Singular "cocina del fuego".
